Harvest: Manual with sorting, 80% destemmed
Vinification: Alcoholic fermentation with our indigenous yeasts in conical wooden tanks. Light pumping over and punching down depending on the tasting.
Elevage: Aging in 20hl conical wooden tanks for over 15 with racking and resuspension of the lees. Refining in bottle for at least 12 months prior to marketing.
Aging potential: More than 10 - 15 years
