Culture: Organic Agriculture (certified since 1989)

Terroir: Oligocene clay-limestone soil (27 million years old). 200m altitude on the side of our hill in a naturally protected area.

Harvest: Manual with sorting

Vinification: Alcoholic fermentation with our indigenous yeasts. Light pumping over and punching down depending on the tasting.

Elevage: Aging in conical wooden tank before bottling. Refining in bottle for a minimum of 6 months prior to marketing.

Aging potential: 10-15 years

Serving: 18°C

Pairings: Sisteron lamb and spring vegetables, Tournedos Rossini, Sweet potato and wild mushroom gratin, Truffled Brillat Savarin, Opera cake

Its young, bright garnet color is just beginning to show the age of the wine. The nose is more representative of a great mature wine with a superb complexity made of fresh and varietal notes (black fruits, sweet spices, pepper), a very noble heart of the nose (fresh wood, moss, beeswax, chimney soot) nicely accompanied by gourmet aromas (vanilla, candied cherry) to finish on a magnificent and noble bouquet of a remarkable freshness signature of Clos de Caveau (camphor, eucalyptus, menthol, turpentine); the palate is characteristic of the vintage with a beautiful enveloping warmth, a magnificent silkiness almost masking a very beautiful structure of very fine tannins; a great gourmet nobility.
