Terroir: Oligocene clay-limestone (24 million years). 160m altitude around the Clos in a naturally protected area.

Harvest: Manual with sorting

Vinification: Alcoholic fermentation with our indigeneous yeasts in concrete vats. Light pumping over and punching down depending on the tasting.

Elevage: Aging for more than 12 months in conical wooden tank and concrete vat. Refining in bottles prior to marketing.

Aging potential: 10 years

Serving: 18°C

Nyons tapenade and blackberries, pork ribs with mustard and honey crust, John Dory with chorizo sauce and Espelette pepper, fruity Comté cheese, Crottin de Chavignol.

Young garnet color. Nose is in agreement with classic red and black fruits (blackberry, blackcurrant, cherry, blueberry) with very noble notes of bramble, undergrowth, gray pepper ending with a beautiful minty freshness. The palate is consistent, very fresh and dynamic, lively, on the same gourmet black fruits accompanied by exotic nuances of ripe citrus fruits and sweet spices. This delicacy is very pleasant now but hides a real potential for evolution with a guard guaranteed by a real and beautiful very fine and coated tannic structure. The length is magnificent with a very engaging salinity.
